It is a beautiful sunny day here in Sydney 🙂 What’s a better way to start a day than a Pancake Brekky? Made these amazing banana & coconut pancakes. Wasn’t expecting them to be this tasty. This is a nut-free version, replace tahini with some seed butter for sesame-free version, vegan, gluten-free and very filling & dense.
You need:Â
- Organic Buckwheat Flour-2/3 cup
- Organic Coconut Flour-1/3 cup
- Agave[or]Coconut Sugar[or]Stevia-1 Tbsp or more (if you have sweet tooth)
- Salt-a pinch
- Chia Seeds-1 tsp
- Ripe Bananas-1 large
- Tahini-1 Tbsp
- Sultanas-2 Tbsp
- Coconut Milk-1/3 cup
- Water-2/3 cup
- Coconut Oil-for the griddle
Method:
- Mix the dry ingredients first-Buckwheat flour, Coconut Flour, Coconut Sugar, Chia Seeds and Salt
- To the dry ingredients, add the wet ingredients-sultanas, tahini & banana (mashed with fork), coconut milk, water and to bring it to pancake batter consistency
- On a hot griddle, pour the pancake batter, drizzle some coconut oil and make these delicious pancakes. Drizzle with some chocolate sauce (Mix agave and cacao powder until you have a chocolate sauce consistency)
- Note: Coconut flour can get burnt on high heat. Ensure the pan is on low-medium heat.

Hey Christina, You could substitute sultanas with raisins. Guess, they are all very similar, just different varieties of dried grapes 🙂
