I just realized I hadn’t posted any dip recipes at all till date. I have these set of ’50 varieties of hummus inspired dips’. Can’t wait to share them all with you. This dip is extremely delicious. Packed with flavors and unbelievably easy to make. 6 ingredients(do I have to count salt in?), less than 5 mins and you will see the dip disappear in seconds 🙂 Let me know if you like it.
You need:
- Cannellini Beans-1 can-washed and rinsed really well
- Frozen and Thawed Coconut-1/4 cup (or) Shredded Coconut -1/4 cup
- Garlic-1 clove
- Lemon juice-from 1 lemon/to taste
- Unhulled Tahini-1 heaped Tbsp
- Salt-to taste
- Pepitas, Paprika and Olive oil (optional-to serve)
Method:
- You get best tasting hummus when you blend tahini, garlic and lemon juice 1st, let it process for few minutes
- Once it is all blended well, add Cannellini beans, Coconut, salt and pulse until they blend. Add some water to get a smoother texture. You could add oil but water-saves you those extra calories
- Serve it paprika sprinkled on top
My husband turned 30 last week. Cooked for 10 good friends of ours. One of them has Lebanese background 🙂 He taught me how to plate it up. You use the rear side of the spoon and gently scrape along the exterior and move to the centre. As in a spiral shape and drizzle olive oil and sprinkle paprika 🙂 And apparently I cannot call this “hummus’ cos hummus literally means chickpeas-I used to call this Coconut Hummus-Now I can’t anymore :. This tastes best with Cannellini beans-You can try chickpeas instead but Cannellini bean will win by a huge margin 🙂
