I think I have tried every single type of Falafel from Lebanese to Syrian. Hypothetically, if there wasย a chance of rebirth, I would love to be half-Lebanese half-Indian. ๐ Just for Falafels- My favorite is a fusion between Egyptian and Lebanese. Dried Fava beans and Chickpeas soaked for 24 hours-ground with spices and herbs-Yum ๐
If I need an authentic recipe, what do I do? Students.. I give them love, respect and knowledge and they give me recipes ๐ from their mums. When I try them out-that’s out of the world experience ๐ Made this as a part of my Vegan Lebanese Platter with Mujaddhara
I like falafels to be mini-sized pan fried bites rather than huge deep fried monsters. I haven’t tried baking this-Not a big fan of baking-YET-I’d get there someday.
You need:
- Dried Split Fava beans-3/4 cup and Chickpeas-3/4 cup (soaked together overnight-I left them forย 24 hours
- Parsley-1/2 bunch
- Coriander-1/2 bunch
- Garlic- 8 cloves-halved
- Onion-1ย huge-cubed
- Ground Coriander -2 Tbsp
- Ground Cumin-1 Tbsp
- Lebanese 7 spice mix-1.5 Tbsp
- Salt-to taste
- Recipe given calls for Baking soda- I discarded this cos I pan fry them
- I added Chickpea flour-2ย Tbsp
- I added Brown Rice flour-2.5ย Tbsp
To do:
- Blend chickpea and fava beans until paste-not super smooth-coarsely-I did my most of them smooth and the final processed one was coarse-Watch out for too much water-Add what you need
- Add rest of ingredients except the flour and pulse until they are broken down into tiny bits-Parsley and Coriander leaves go in first-pulse few times and then garlic and onion
- Mix them all well.
- Add chickpea and brown rice flour.
- Make mini sized patties and pan fry them in oil ๐
- Serve with any of these deliciousย dips

Oh darling, I am loving it. Mujadarra is on my list. Falafels post is also on my mind. This is such a good recipe :). Half Lebanese and half Indian… ;)… Why not? I think I was south East Asian in my previous birth ;). Baking the nuggets is such a good way to eat healthier. I am sure you have paniyaram pan. Use that for all the nugget making :).

Yes. Apparently, that’s the way it has to be done. I have always used canned ones/cooked ones and wondered why doesn’t it look the same/taste the same as take away shops-When I read the recipe-that’s when I realized. It is just soaking the dried beans-grinding them and pan frying them-the best I’ve ever eaten ๐ Thanks for passing by

The only problem with these is that I would eat way too many! I love all things falafel, in any shape, size or form! Good idea on adding the flour, I’ve found a little bit is useful to keep the falafels from becoming too moist and hard to fry! Do you use dried chickpeas and favas, or fresh, or canned? Just curious.
I know-I just gulp them down ๐ I used dried ones-soaked them for a day and pulsed them down. Canned has never worked for me ๐
You’re right, this is a very authentic recipe, Charanya. I will look for the Lebanese spice mix. I love the idea of pan frying too, and maybe I’ll try Sonals suggestion of using a paniyaram maker. Will let you know!

This does look like a winning recipe – just the sort thing guests at Fiesta Friday like to learn about. I think the fava beans are a wonderful variation. I often cook with chickpeas, but much as I like fava beans don’t have many interesting recipes for them so will try this method. Also I like the small size – I think that is a great tip. I think fava beans are key. I have a recipe that calls for chickpeas only and it never tastes the same as restaurant falafel.
Me too. I used to use canned chickpeas and make sliders-but this is one real falafel recipe. ๐
Yum! Need to try this recipe out. Will go hunting for Lebanese spice mix today. Being on an elimination diet for 30 days, I am essentially vegan and gluten-free and love recipes like this which makes me feel like I am not so deprived afterall!
