OMG-This is a recipe to die for. Extremely tasty and healthier version of normal hummus. I added goodness of spinach to normal hummus, thence the name 😛 Mum made me watch Popeye and that’s how I got into eating spinach 🙂
My husband who is not a big hummus eater loved this. We emptied the container in a day 😀
You need:
- Baby Spinach-2 handfuls
- Chickpeas-1 can washed,rinsed and drained
- Tahini-1.5 Tbsp
- Dry roasted cumin seeds-crushed in mortar and pestle-1/4 tsp
- Garlic-1 clove
- Lemon Juice-to taste
- Salt-to taste
Method:
- Take the spinach-in it goes into a pan, sprinkle some water and let it wilt until there is no more moisture in the pan. Let it cool.
- Into a blender, throw the tahini paste, crushed cumin seeds, garlic, lemon juice and pulse until smooth-hummus tastes better if you do this first
- Add Chickpeas and Spinach in and blend until smooth
- Add tbsp of water at a time to ease the process until the hummus is smooth
- Enjoy with Mini-Falafel Bites
Looks delish! Will def try this week!
