There were days in my life I would have a spoon of Nutella with almost every meal as a dessert. After I chose to be vegan, I gave away 2 jars of unopened nutella. It was as if my heart was being ripped out. And as days passed, I slowly let it go until last week I got a pack of hazelnut and I recreated refined sugar free, gluten free, dairy free, vegan Nutella. 5 ingredients and world of heaven.
You need:
- Medjool dates-8/more for sweeter-soaked in warm water for 15 minutes
- Cacao Powder-1 Tbsp + 1 tsp /more for chocolaty
- Hazelnuts-250 grams
- Concentrated Vanilla extract-1 tsp (make it 2 tsp for normal)
- Salt-a pinch.
- Water-3 Tbsp.
Method:
- Preheat the oven to 200 C/390 F and turn the oven off.
- Add hazelnuts onto a tray, chuck them in an oven for 15 mins. Take them out and check if the skin would come off. Else, repeat the process and wait until you can remove the skin.
- Let it cool, add it into a food processor and process until it is broken into bits and starts to get into a nut butter consistency.
- Once nice and runny,add dates, cacao,vanilla,salt and turn your processor on. It would start to lump. Time to add water.
- One Tbsp at a time and process until you get nutella consistency
- Store in an air-tight jar for up to 7 days. It never lasts longer.
