My favourite vegetable of all times-Sweet Potato. Roast them with a bit of ground chili and salt, I am happy with just that and some spinach leaves ๐ Is it weird to have salads without dressing? I hate how dressing changes the taste of vegetables. I add some spices to vegetables, usually roast them and make a salad.
After theย success in making my own homemade almond feta cheese,ย I made this ultimate roasted sweet potato salad. Requires no dressing /you can top this salad with any dressing of your choice.
You need:
- Sweet Potato-1.5 cups-chopped as cubes (same sized bits)
- Almond feta crumbled-to taste-1/3 cup
- Spinach leaves-couple of handfuls
- Red onion-1/4 small-sliced lengthwise
- Dried Cranberries-2 Tbsp
- Salt-to taste
- Chili powder-1/2 tsp
- Oil-1 tsp
- Lemon juice-1 tsp
Method:
- Preheat oven to 170 C/340 F
- In a pan, heat oil, once hot, add chili powder and salt. Reduce flame to low and roast for a minute. Add cubed sweet potato.
- Toss them really well so the spices coat the potato
- Transfer them onto a tray lined with a baking paper and roast them until sweet potato is tender and looks brown on the outside
- In a bowl,ย add spinach leaves, over which add sweet potato, crumble almond feta and red onion slices, add dried cranberries, drizzle some lemon juice.
- Toss and serve

I might need to try that feta cheese! I have made a gluten, milk, and egg free one yet (silly food allergies & celiac), but it looks perfect in this sweet potato salad. AND, I love sweet potatoes! I am gluten-intolerant. Haven’t got myself checked for celiac yet. I love your GF recipes. I am definitely making a berry crumble soon. With a different topping perhaps. I love sweet potatoes too. I tried fries the other day and it was a mishap. But the bits that didn’t burn tasted amazing and that’s why I tried roasting and using them in a salad ๐ Have a great weekend too <3
Awh, thanks! Let me know what you do for your berry crumble! I use sweet potato fries all the time to calm my bread cravings because I love bread and miss it dearly. My sister just gave me an ActiFry for Sister’s Day (a made up holiday we’ve been celebrating for 15 years, so maybe it’s real now?), so I want to try to make them in that too. ๐
And, just as a heads up, you can only be diagnosed with celiac if you’re eating gluten, but I feel as though you probably already know that. <3

Yeah I went off gluten cos I was having severe tummy cramps. Doc asked me to re-introduce it back into my diet and it was real real bad. I might see a specialist in India when I visit my in-laws. I am feeling good without gluten and not ready to go through the pain. ๐
