You have to have courage to put this statement out here ‘World’s best Vegan Cheesy Hummus’. When I say World’s best-I mean it. Packed with nutritional yeast, it tastes like cheese sauce 🙂
I had a big group of my Australian friends who attended my wedding back in India. We had a catch up dinner yesterday and I made this big batch of cheesy hummus. Everyone loved it. Jono and Tali took a box of hummus home. Best part-it uses 6 ingredients and you will have a big bowl of hummus staring back to you going -‘Eat me please’ and there wouldn’t be a speckle left over.
You need:
- Chickpeas-2 cans/around 800 grams cooked chickpeas
- Juice-from 1 medium-sized lemon (watch out)-if you like it tangy-this should do-or if you hate too much lemon juice-add bit lesser
- Garlic-one large clove-not more-you don’t want it to be too much. Love Garlic?-Make it 2 cloves
- Hulled Tahini-2 Tbsp-you could add extra 1/2 tbsp max. Unhulled tahini- Make it a Tbsp and half
- Nutritional Yeast-1.5 Tbsp [not more]
- Salt-to taste
- Water-start with 1/4 cup, add a Tbsp a time, check consistency
- Olive oil/paprika-to serve
Method:
- For the creamiest hummus possible, into a high-speed food processor, add garlic, tahini, nutritional yeast, salt, lemon juice and process for 30 seconds. This makes hummus super creamy
- Now add drained, washed cooked/canned chickpeas (don’t skin chickpeas-let it stay on them)
- Add 1/4 cup water and process it again. If not the right consistency, add a Tbsp at a time and process until smooth paste
- With flip-side of a spoon dipped in water, create a spiral pattern on hummus. Pour Olive oil into the ridges and sprinkle paprika. Olive oil-keeps hummus from drying out. Yum 🙂
Serve with these yummy mini-falafel bites.
You could pipe them over some Hummus and make these cute canapes
Or, if you have some left overs, make these quinoa cakes
