What’s your favorite dessert? If you are into almonds, dates, banana, vanilla and coconut, you gotta make this. No excuses. Cos this is ‘the’ banoffee pie. I made them for my students and one of the them wanted me to start selling these and the other said this will be her Christmas dessert. I am not exaggerating. This is a masterpiece. Best part of all, takes under 10 ingredients to make this. And hey, big things come in little packages.
Talking about desserts, it is an Indian tradition to give a new born child, diluted sugar solution (just sugar and water mixed together) to welcome the child. It is usually given by the child’s uncles. My mum is a massive sweet tooth and she expected me to be the same. The very day I was born, my awesome uncle gave me my first dose of sugar. Usually the child would smack the lips and enjoy the sweetness. But I spat it out. That’s how much I hated sugar literally from Day 1. I am better now, still not a big dessert fan. I think couple of fruits a day give you the sugar that you require for the day.
Banoffee Pie is traditionally a pie made out of caramel, bananas and whipped cream. These mini-pies are made up of 4 layers
- A base that is made from almonds and dates
- A caramel layer made from almond butter and dates
- Bananas
- Coconut whipped cream

You need:
Base layer
- Pitted Medjool Dates-15
- Raw Almonds-1 cup
- Concentrated Vanilla extract-1 tsp (If normal extract-1.5 tsp)
- Salt-1/4 tsp
Almond Caramel
- Almond Butter-1/3 cup [I use roasted almonds]
- Pitted Medjool Dates-7
- Concentrated Vanilla extract-1.5 tsp (If normal extract-2 tsp)
- Salt-1/4 tsp
- Water-2 Tbsp
Banana Layer
- Banana-1 large
- Agave nectar/Coconut nectar/Maple Syrup-[optional]-to drizzle
Whipped Coconut Cream
- Coconut cream-500 ml can [Refrigerate the open coconut can, scoop the coconut cream out]
- Agave nectar/Coconut nectar/Maple Syrup-[optional]-1/4 cup
- Lemon juice-1 tsp
- Salt-1/4 tsp
- Cacao powder-to dust
Method:
Base layer
- In a food processor, add all ingredients and process until they come together. Divide the dough into 12 portions
- Add them to cling-wrapped cupcake tins and form cups
- Chuck them into the fridge to chill while making the caramel sauce
Almond Caramel
- Process the ingredients together until they form a caramel sauce.
- Add it to the refrigerated cups.
- Back it goes into the fridge.
Banana Layer
- Slice the bananas and one/couple of slices onto the caramel layer.
- If bananas are not very sweet, drizzle some agave/maple syrup/coconut nectar-for that extra sweetness.
- Back it goes into the fridge.
Whipped Coconut Cream
- Whisk all the ingredients together and chill it for an hour in the fridge.
- Add the coconut cream to the banoffee cups.
- Dust cacao on top
- Keep it refrigerated, you could also freeze them.
